Quiche-----(From French Club Files)

Fresh baked quiche… mmmmm !
Recipe:
One 9 inch pie shell (unbaked)
5 strips bacon, cooked
1 and ½ cups light cream or whole milk
½ cup grated swiss cheese
½ tsp pepper and ½ tsp. nutmeg
4 eggs
sautéed , diced onion
(optional)
Fry bacon and crush. Spread over bottom of unbaked pie shell. Sprinkle grated cheese on top (and the onions, if used). Place cream, spices and egg in blender to mix (or stir well by hand.) Pour over the pie shell.
Bake at 350 degrees for about 30 minutes
or until set and top is golden. (It always takes 35 to 45 minutes or so
in my oven.) I usually sprinkle a little more grated Swiss cheese on
the
top of the quiche as soon as it comes out of the oven.
